Homemade Butter in a Stand Mixer Rich, Creamy, and So Simple

We’ve given you homemade bread and bagels—now it’s time to top them with something truly irresistible. We first started making our own butter simply because we didn’t want to waste a bit of leftover heavy cream. What began as a no-waste experiment turned into a staple we can’t live without. Store-bought butter just doesn’t hold a candle to the creamy, fresh flavor of this homemade version.
There are many ways to make butter, but this one has become our favorite—especially in our busy kitchen. It’s quick, easy, and only requires one ingredient. Let’s get churning!
How to Make Butter in a Stand Mixer

You’ll Need:
Ingredients:
1 pint (2 cups) heavy cream (full-fat)
Tools:
Stand mixer with whisk attachment
Spatula
Cheesecloth or paper towels
Large bowl
Ice
Cold water
Instructions:
Leave heavy cream on the counter for 20-30 minutes prior to mixing. TIP: Bringing the heavy cream to room temperature will make it easier to separate. If not it will take longer.
Pour your heavy cream into the bowl of your stand mixer.
Using the whisk attachment, start on a low speed and gradually increase to medium-high.
First, you’ll get whipped cream. Keep going. The cream will break, separating into butter and buttermilk.
Once the butter clumps together and pulls away from the sides, strain out the buttermilk (save it for pancakes or baking!).
Place the butter in a large bowl of ice water and knead it using a spatula or clean hands to rinse out the remaining buttermilk. Repeat with fresh cold water if needed.
Wrap the butter in cheesecloth or paper towels and gently squeeze out any extra liquid. If extra liquid is not removed it can cause the butter to go rancid.
Store in an airtight container in the fridge.
Flavor It Up!
Once your butter is made, the possibilities are endless:
Salted Butter: Mix in ¼ tsp of salt per pint of cream for that classic, flavorful taste.
Garlic Herb Butter: Blend in minced garlic, fresh or dried herbs like parsley, rosemary, or thyme, and a touch of salt. Perfect for bread, baked potatoes, or grilled cheese instead of mayo.
Whipped Honey Butter: Return your butter to the stand mixer, add a drizzle of honey, and whip until light and fluffy. Amazing on toast, cornbread, or fresh bagels.
